Aging is that maturing process that occurs when wine oxidizes through contact with air. The barrel will impart a very nice OAK flavour and aroma to the wine.

 

Current Wines Open for Aging~

Italian Amarone (from 23L juice)
Shiraz (with grape skins)
Rosso Grande (from 15L juice)
French Chardonnay (from 23L juice)

Set Bottling Date: JAN 30, 2007

Approximately four months total time. We also include a more premium cork, so that you may cellar the wines longer.

 

Three months in the barrel is the equivalent to 1 year aging at home.

The barrel must be topped up with wine during the aging time and this wine is included in the barrel charge. (Ask about the "Angels Share")

You will have the option of NOT filtering your wine. Filtering wine does strip some of the body and flavour from the wine.

By not filtering, the wine will be fuller and richer in flavour.
